Academic Tables (Tavole Accademiche in Italian) is the meal service at the University of Gastronomic Sciences in Pollenzo. This unique cafeteria brings together education, haute cuisine, fair pricing and local foods, and during Cheese it will turn into a youthful pop-up restaurant. Remember this name, as you're sure to be hearing more of it in the coming years. At just 24, Paolo Griffa was Marco Sacco's sous chef at the two-Michelin-starred Piccolo Lago restaurant in Verbania, and he recently won a contest that named him best Italian chef under 30. Ambitious, determined and with exceptional talent, he is one of the most promising proponents of contemporary Italian haute cuisine. He has one defect, unfortunately: He doesn't eat cheese. He sees this as a stimulus rather than a problem, however, and he'll be taking us on a fascinating journey through the many forms of milk.
