Tradition has it that 'ubriacatura,' the method of 'inebriating' cheeses with alcohol, originated on the left bank of the River Piave during the famous retreat from Caporetto. The few cheeses left from the spoils of war were hidden from the advancing Austro-Hungarians by covering them with grape pomace. When they were uncovered, the cheeses were more pleasant on the palate than they had been in the first place, which is how the production of cheese known as "imbriago," or 'drunk,' began. This workshop will take you on a voyage of discovery among the tipsiest cheeses in Veneto, Piedmont and Campania, served with the wines they are matured in.
