Vilified by modern diets, butter is a classic ingredient in cooking and a product with a strong historical identity. The Brazzale family have been making their famous “Burro delle Alpi” since 1784, and now they have produced a manifesto for the return of butter. You’ll sample a selection of plain and salted butters served with bread made by the staff from Pollenzo’s Tavole Accademiche and paired with a selection of wines from Masciarelli.
