André Valadier and Laguiole cheese: a conversation with a key player in the French cheese scene.

In the 1960s, thanks to André Valadier, acclaimed producer from the small region of Aubrac, the Tome de Laguiole cheese was resurrected, as was interest in the Aubrac cattle breed. The founder of the Jeune Montagne cooperative, he is also a key figure in the history of French cheeses and a point of reference for the new generation of French cheesemakers. Slow Food has acknowledged the value of his work with the Slow Cheese Award.
