Two Bergkäse, raw milk Alpine mountain cheeses, from different altitudes and sampled both at three different age points, will be paired with dry German Riesling wines. Four top producers will each be presenting two vintages, one young, one mature. Ursula Heinzelmann's workshop will explore the impact aging has on both cheese and wine and how this affects the pairing.
