Why is it so important to save raw-milk cheeses? Raw milk captures the typical fragrances and flavors of a place, reflecting the grasses and flowers of a pasture and rendering the finished cheese more tasty, complex and interesting. But what happens if the processing of raw milk is banned? The laws of many countries, like the United States, Canada and Australia, restrict or completely forbid the sale of raw-milk products. In this workshop, we'll meet some cheesemakers who are fighting every day to be able to offer their fellow citizens a quality product.
