For some, insects as food is a completely new experience. For others, it is simply delicious, daily sustenance. Nordic Food Lab (NFL), a food research institute based in Copenhagen, has traveled the world to learn about high-quality insects and understand their role in diverse traditional cuisines and agro-ecological systems. From the banks of Lake Victoria in East Africa to the deserts of central Mexico, they have collected and shared recipes, cooking techniques, ecological knowledge and local stories to delve into the gastronomy of this branch of the human diet. Josh Evans and Roberto Flore of NFL and their former colleague Ben Reade will prepare a few tastes from their travels and introduce producers and their products to share knowledge about this vast and largely undervalued category of traditional food.
