Tea in Japan: Innovation and Tradition

Tea enjoys a primary role in Japanese food culture. In this workshop, the food researcher Nami Fukutome will introduce you to the world of Japanese tea; from the production process to particular sensory characteristics, consumer trends, and the proper tasting method. Shimodozono is one of the most important tea producers of the Kagoshima prefecture, the second production region in Japan. For the first time at Salone del Gusto, she will have you taste a selection of organic bottled teas, from both single crus and blends, a new concept developed in collaboration with the University of Ochanomizu. You will also try goishicha, an extremely rare lacto-fermented natural tea (currently a Slow Food Ark of Taste candidate).
