Mountain Pasture Cheese from Carso and Slovenia

Discover the cheeses from the border between Slovenia and Italy. From the Julian Alps of Tolmin Valter Kramar and the restaurant Hisa Franko in Kobarid (Caporetto), this passionate affineur will offer you three cheeses of differing ages: 4 months (June 2014), 2 years and 4 years. These will be accompanied by a selection of sir iz zemljanke, a product made by the same technique, but on Italian soil, aged in the caves of the Roncofreddo rectory by Renato Brancaleoni. Just steps from Dario Zidarich, winemaker in the Prepotto area of the Carso, Brancaleoni has been tending his herd of 80 Holstein cattle since 1986. He will offer a tasting of his tabor and jamar raw cow milk cheeses; the latter ages for nine months in caves in the Carso at a depth of 70 meters, reachable only by rope and harness. To be paired with wines from Slovenia and Friuli.
